This super simple recipe is one of my all-time favourites. It’s tasty, very filling and perfect for the whole family.  Cheesy broccoli bake is freezer-friendly and also suitable for vegetarians. Such a quick and easy recipe to prepare which makes it ideal for a midweek meal when you don’t have much time on your hands.

Slimming World cheesy broccoli bake ingredients

Ingredients

500g broccoli florets

200g cherry tomatoes quartered

8 spring onions finely chopped

200g fat-free cottage cheese with onion and chives

2 large eggs beaten

3 garlic cloves crushed

Salt and freshly ground pepper

110g reduced-fat cheddar cheese grated

4 tbsp finely chopped parsley

Method

1 Preheat oven to 220°C/200°C fan/gas mark 7

2 Cook broccoli in a large saucepan in boiling water for 2-3 minutes. Drain off the water, transfer to a bowl and put to one side.

3 Add spring onions and cherry tomatoes to the broccoli, mix well and transfer to an ovenproof dish.

4 Whisk the eggs in a separate bowl along with the cottage cheese and garlic. Keep mixing until the mixture becomes smooth. Season and then add parsley.

5 Pour the egg mixture over the vegetables and gently stir to make sure the ingredients is evenly covered. Sprinkle the cheddar cheese on top and cook in the oven for 15-20 mins.

6 Remove from oven and serve.

I’m not on slimming world myself, but my mum & sister are, and I don’t eat meat, so getting together for meals isn’t always easy, but with recipes like this it makes it a whole lot easier. #MMBC

    Broccoli Bake is one of my favourite dishes. This recipe looks much tastier than mine and it’s certainly the weather to move to healthy, warming dishes.
