Slimming World Friendly Cheese and Onion Scones
I love Slimming World friendly meals. Whenever we have been on plan, I have always been able to find loads of great meal recipes that we could all enjoy as a family. One of the greatest things about this diet plan though is the ability to have snacks! Obviously, it is better to reach for a piece of fruit in between meals, but what about when that burning craving is for something savoury? That’s where this fantastic cheese and onion scone recipe comes in. A great snack that’s low in syns if you use your cheese as a healthy extra, just 2 syns each or 4 syns each otherwise. Perfect to keep in the fridge for up to three days for when an apple just won’t cut it.
You could even make a bigger batch and freeze them for up to 3 months.
Absolutely yummy!
Ingredients
x2 x 80g packs of instant mash
x1 onion
x4 eggs
75g grated reduced-fat cheddar cheese
400g fat-free cottage cheese
Cooking Spray (Fry Light, Clover spray, etc)
Method
Preheat Oven to 200ºC
Chop up the onion finely and fry in a pan on medium heat for 5 minutes with Fry Light.
Mix all the ingredients and the onion in a large mixing bowl
Using your hands, cup a small amount into your hand and roll into a ball a little larger than a golf ball.
Repeat the above until you have used up all of the mixture, you should get 12 decent sized scones
Pop them onto a baking tray and flatten down slightly like scones
Cook for 20 minutes or until golden brown
Leave to cool and enjoy. Can be stored in the fridge in an airtight container for up to three days.
