If you ever pop by my weekly meal planner you will already know that we try to include a couple of meat-free meals each week. Falafels are one of our staple vegan-friendly meals that we all enjoy. These are really easy to cook and are Slimming World compatible. This Slimming World Falafel recipe makes 12 falafels and three falafels have one syn value. It really doesn’t matter if you are following the Slimming World plan or not, these falafels are amazingly tasty, budget-friendly and so versatile.
Ingredients
- 1 400g can of chickpeas
- 1 brown onion (roughly chopped)
- 3 cloves of garlic (sliced)
- 2 tbsp coriander leaf
- 2 tbsp parsley
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp of crushed chillis
- Black pepper to taste
- 1 tsp baking powder
- 3 tbsp plain flour
Method
- Preheat your oven to 220℃/fan 200℃/gas 7.
- Put the onion and garlic in the food processor and blitz until coarsely pureed.
- Add the rest of the ingredients and pulse until smooth.
- Take a golfball-sized amount of mix and flatten into a small patty.
- Spray a baking tray with low-fat cooking spray and arrange the falafels.
- Bake for 15 minutes, turning halfway.
- Serve warm with pitta bread and salad, couscous or sweet potato wedges. Or allow to cool and refrigerate them in an airtight container for up to four days and have them in a tortilla wrap with salad for a light, low-fat lunch. Slimming World Low Syn Falafels
A low-fat version of this Middle Eastern classic
Ingredients
- 400 grams canned chickpeas drained and rinsed

- Take golfball sized pieces of the mixture and form small patties
- Spray low-fat cooking spray onto a baking tray
- Arrange the falafels onto the tray and bake for 15 minutes, turning halfway through cooking
