Celebrating British Pie Week – Chicken And Ham Pie

The first full week in March is British pie week. Although originally started in 2007 by Just-roll as a marketing gimmick. Endless pubs and restaurants have now embraced pie week and all have various pie offerings and deals.

I don’t think that there is a much more comforting dish on a cold miserable day than a steaming plate of pie and mash. My lot go mad for a pie! So here’s our favourite pie recipe. We like to make one large pie for all of the family, but you could quite easily divide this recipe between 4 or 5 individual pie dishes if required.

Chicken and ham pie with peas and mustard mash


For the pastry,

150 grams of Trex, baking block or Lard,

300 grams of plain flour and

One egg.

For the filling

Two chicken breast fillets, cut into small cubes,

One gammon steak, cut into small cubes

One chopped onion,

A vegetable stock cube, crumbled,

300ml milk,

2 tablespoons of plain flour,

50 grams of butter or marg,

Pinch of mixed herbs.

2 garlic cloves, crushed.



Fry the gammon, chicken, onion and garlic in a pan with a tiny amount of oil for 5 minutes and add to the pie dish.

Melt the butter in a saucepan, when the butter has melted, add the plain flour and stir continuously for one minute, slowly add the milk, whisking all of the time. Continue whisking while bringing the sauce to the boil, add the mixed herbs, stock cube and season to taste. Pour over the meat in the pie dish and mix together.

Cut the fat into small cubes, add the flour and rub together into breadcrumbs. Handle the pastry as little as possible to keep it nice and short. Add the egg and work into the pastry. tip out onto a floured work surface and roll to the required size. Drape over your pie dish, trim, cut a small hole in the centre and glaze with a little milk.

Pop the pie in the oven at 200 degrees for 30 minutes or until the pastry is golden.

We like to serve this with mustard mash and veg, but you can serve this pie with a whole variety of sides.

You can substitute the ingredients in the filling to suit your own taste. This recipe tastes great with chicken and leek, chicken and mushroom or ham and cheese.
