Fakeaway KFC inspired air fried chicken on a wrap with lettuce and cheese.

I have recently got into air frying and I cannot believe what a difference it has made to the way we cook. We have never had a deep fat fryer except for when we were kids and our parents had one, and we rarely shallow fry anything. Chips and wedges had always been cooked in the oven but since we’ve had our air fryer, I’d much rather make chips from scratch knowing that there is only a minimal amount of oil in them.

We enjoy Southern Fried Chicken in our house as much as anyone else and usually just pop it in the oven. It never quite tastes the same as the proper takeaway chicken though. A couple of years ago, an ex-wife of a particular colonel published what was made out to be the original KFC recipe. So I thought that I would tweak it slightly to make it in our air fryer.

Air fryer fakeaway fried chicken tastes absolutely amazing! The recipe calls for quite a few ingredients that I didn’t have on my spice rack, however, all were available at my local Asda for a few pounds. I used chicken thighs because I prefer leg meat when I am frying, this is of course personal preference and you could quite easily substitute it for breast meat, wings, or even just chop a whole chicken up like they do in the buckets.

Cooking chicken thighs in the Ninja air-fryer

Ingredients

150g plain flour

1 tsp of salt

1 tsp of dried thyme

1 tsp dried basil

2 tbsp paprika

1/2 tsp dried oregano

1 tsp celery salt

1 tbsp garlic salt

1 tsp ground black pepper

1 tsp English mustard powder

1 tbsp white pepper

1 tsp mixed spice

Frylight or spray oil

 

Method

  1. Put the flour, herbs, and spices into a large mixing bowl and mix well.
  2. Cut the chicken into desired pieces.
  3. Dip the chicken into a bowl of cold water, then roll it in the flour mix until well covered.
  4. Shake off the excess flour and place it on a plate, repeat until all of the chicken is coated.
  5. Preheat your air fryer to 200 degrees.
  6. Divide your chicken into batches, allow only one layer of chicken in the basket at a time. If there is more than one batch, preheat your oven to 150 degrees to keep the chicken warm while the next batch is cooking.
  7. Spray the chicken on both sides with spray oil or fry-light then place in the basket.
  8. Air fry for 5-6 minutes on each side depending on the size of your pieces.
  9. Serve immediately however you like. On a burger or sub roll, in a wrap with salad, or just on a plate with fries, beans, and coleslaw.
