Try this delicious hearty oven-baked Slimming World meatballs dish with vegetables. Perfect to add to your Slimming World recipes and ideal for the whole family to enjoy. I have used pork, however, you could always replace that with turkey or lean beef.
2 Large red onions
550g lean pork mince (5% fat)
2 tsp Oregano
2 tsp basil
2 Garlic cloves crushed
Salt & freshly ground black pepper
400g tin of chopped tomatoes
x1 vegetable cube
150ml of hot water
2 medium courgettes, trimmed and cut into chunks
1 medium aubergine, trimmed and cut into chunks
1 Preheat the oven to 200°C/Fan 180°C/Gas mark 6
2 Put half of the chopped onions, the courgette, the aubergine, basil, stock cube, tomatoes, passata and water into a roasting tin. Mix well, cover with foil and bake in the oven for 50 minutes.
3 In a bowl, put the remaining onions, pork mince, oregano, garlic and salt and pepper. Mix together and then divide into twenty balls. Put into the fridge until the vegetables are done.
4 Take tray from oven, remove foil, stir the mixture and place meatballs on top. Put back into the oven for 40 minutes.
