It’s been a while since I last shared our last meal plan. We’ve still been meal planning, but between busy schedules and everyone being home at different times, some weeks have been more successful than others, and convenience has definitely stepped in now and then.
I’m so happy to be using Gousto again this year as part of our weekly meals. It makes dinnertime so much easier and something we all genuinely look forward to. Here’s what our first meal plan of 2026 looks like!
Our Meal Plan For This Week
Monday – Gammon, egg and homemade chips.
Tuesday – Chicken Shawarma with rainbow couscous
Wednesday – Creamy Chicken Thigh & Mushroom Hot Pot With Kale (Gousto)
Thursday – Creamy Chicken Breast & Sweetcorn Chowder (Gousto)
Friday – Burger pasta
Saturday – Sticky Chinese Pork
Sunday – Tuna Pasta Bake (Gousto)
Busy Week Top Tip
One thing that really helps on busy weeks is choosing meals that don’t need a lot of prep or can be shifted around easily. If a day ends up being more hectic than expected, I’ll swap meals around rather than scrapping the plan altogether. Having a couple of “backup” options makes a big difference.

I like the sound of the Creamy Chicken Thigh & Mushroom Hot Pot With Kale!
We’re back on the Gousto boxes this week too. They really do help keep me organised with meal planning. What a great start to the week with the gammon! That’s one meal I never seem to make at home, it’s always a meal we get when we go to the pub! I should make an effort to make it. x
I had to Google gammon as I had never heard of it. How do you cook it? Do you bake it like a ham? #MMBC
I’ve not tried any of the meal boxes. Maybe one day. I do like to meal plan and, like you, I always have a back up, especially as I’m never sure how many of us will be home. #MMBC
