Meal planning for families.

Last weeks meal plan went down a treat. When I made the cottage pie on Monday, I doubled up all of the quantities and made some individual servings in foil containers and froze them. It’s so easy to just pop one in the oven for 45 minutes and have a nice lunch. I am going to continue having at least one meat-free meal a week where I can.

Heres what I have planned for this week.

Monday – Vegetable fajitas with a green salad, sour cream and guacamole. I’ve got my sarcoid assessment this afternoon so this will be an easy meal to prepare for when I get back.

 

Tuesday – Chicken risotto. I stumbled across this Slimming World Chicken Risotto recipe a few years ago and I have been hooked ever since. I don’t feel the need to snack so much after this either as it’s quite filling! I’m terrible for picking between meals.

 

Wednesday – Vegetable stir fry with broccoli, carrot and onion fried in garlic and soy with bean sprouts and noodles. So easy to make and just as good as a takeaway.

 

Thursday – Chicken burger wraps served with potato wedges. I spotted this one on Pinch of Nom. We normally have some chicken burgers in the freezer so I pretty much have all the ingredients to hand.

 

Friday – Cheesy meatballs with spaghetti and tomato ragu. I love making these meatballs and we could all quite easily eat them every week!

 

Saturday – Craig’s at work today so me and my boys will be making some homemade pizzas. They get to put on their own toppings and we have fun getting messy in the kitchen!

 

Sunday – Sausage casserole with creamy mash potato.

  1. Ahh! I love making extra of our meals and freezing them or having some for lunch the next day.
    We had veggie fajitas a couple of weeks ago and the kids didn’t even notice that there was no meat in them.
    Homemade pizza’s are the best.
