Thankfully we are all starting to feel a little more back to normal after our Covid outbreak and everyone’s appetite is returning slowly. So, this week resembles a more realistic menu for us. We will also be resuming our Gousto subscription ready for next week’s plan.
Without further ado, here’s what this week’s meal plan looks like.

Monday
Lamb shanks with roast vegetables, mash potatoes and minted gravy. I know it seems a lot for a Monday night, but I have broken up from uni for Easter and I want to have a really nice meal with all of us as we are usually eating at all different times on Monday.
Tuesday
Slow cooker doner kebab in flatbreads with salad and garlic mayo.

Wednesday
Cheese and red onion potato gratin with steamed broccoli. Our meat-free meal for the week that takes minimal effort.
Thursday
Chinese-inspired five-spice beef fried rice. This is another really quick dinner that satisfies even the biggest appetites.
Friday
Homemade cheese-filled meatballs with tomato sauce and spaghetti.
Saturday
Homemade lasagne with garlic ciabatta.
Sunday
It’s Easter Sunday so that means roast dinner. We’ve got a lovely piece of beef from Asda (and £1 back into my rewards pot!) Roast carrots, parsnips and potatoes, cauliflower cheese, Yorkshire puddings, leeks and really thick gravy. I’m going all out and baking a red velvet chocolate cake for pudding. We don’t usually have pudding, but hey, it’s Easter!
Is there anything that takes your fancy on my plan this week? Let me know what you have planned for Easter.
I am glad you are all just about back to normal. When we had Covid it seemed to be more us lacking the energy to cook than want to eat.
I hope you enjoyed your lamb tonight, it sounds so good.
Fab meal plan x
