Time for another meal plan. Last week’s meal plan went down well and the sausage and leek mash pie was awesome! This week is a little more relaxed as we got two big appointments done last week. I’m looking forward to a pretty chilled out one this week with lots of tasty dinners to look forward to!
Here is what our meal plan looks like this week –
Monday – Chicken Enchiladas.
Tuesday – Sweetcorn & courgette fritters topped with poached eggs. I saw these on BBC Good Food and thought they looked amazing so I will let you know how we get on with those.
Wednesday – Teriyaki pork meatballs, noodles and pak choi. We had Char Sui Pork Noodles last week and they were such a hit that I thought I would try another Asian inspired dish.
Thursday – Cheesy broccoli bake. This is such a firm favourite in our house. Filling, simple and budget-friendly.
Friday – Chicken goujons and salad wrapped in pitta. I am going to coat some chicken breast mini fillets in breadcrumbs and serve with a baby leaf salad.
Saturday – Slow cooker chicken curry. Always clean plates with this one, serving with cheese covered naan bread and pilau rice. Our fakeaway for the weekend.
Sunday – Minted lamb shanks. I popped into the local farm shop last week and saw some amazing lamb shanks on the butchers counter. So I am off to get some this week and am going to cook them in the slow cooker with a mint gravy.

Absolutely Delicious
Sounds so yummy! Tonight we’ll have a pasta/ ground turkey baked casserole and a shrimp stir fry with rice later this week. Other than those two meals I’m still not sure what we’re planning.
Ohh! Those Sweetcorn & courgette fritters do sound tasty and the Teriyaki meatballs.

I love reading other people’s ‘menus’! It’s so inspiring and great for getting ideas of new recipes to cook. I am stuck in a rut at the moment so I think I will give a cheesy broccoli bake a try!
