I am all for cooking no faff tasty meals that all of my family can enjoy. I recently made this super tasty meatball and garlic bread traybake and it went down a treat! I hope you enjoy it as much as we did.
Ingredients
500g lean beef mince
3 garlic cloves crushed or 3 tsp of garlic puree
1 large onion
2 400g tins of chopped tomatoes
150g mozzarella
1 1/2 tbsp olive oil
1 tsp dried oregano
2 tsp sugar
4 garlic breadsticks/slices, torn up into small chunks
1 tbsp tomato puree
Mature cheddar for topping
Spaghetti to serve

Method
1 Mix the mince, oregano and a little seasoning in a bowl. Roll individual meatballs roughly 1 1/2 inches in size.
Heat half of the oil in a large pan and brown off the meatballs. Once the outside is brown, transfer your batch to a plate.
Now pre-heat your oven to 200℃/fan assisted 180℃/gas 6 and get your choice of shallow oven tray ready.
2 Heat up the rest of the oil in the pan and add the onion. Cook until soft, stirring regularly for about 8 minutes. Now add the garlic, tomato puree, sugar and chopped tomatoes.
3 Let the mixture simmer for 10 minutes and season if you wish. Transfer the mixture to your oven proof tray and place your meatballs on top. Now top with chunks of mozzarella, tear your breadsticks up into chunks and add those too. Finally, top everything with cheddar.
Bake for 15-20 minutes until golden.
Serve with spaghetti.

Never thought of adding the garlic bread to the mix. Usually have it on the side, but I imagine this gives a lovely crunch. What a good idea. #mmbc
