If you’re looking for an easy dessert to bring to parties or to give as a gift, this rocky road fudge is ideal. Once it’s set, you can cut it into neat little squares and package them up in cute boxes or mason jars tied with a little twine. With the holidays just around the corner, it’s a thoughtful homemade gift for friends, teachers or neighbours.

Easy Slow Cooker Rocky Road Fudge Recipe

Ingredients

200g dark chocolate

200g milk chocolate

397g tin condensed milk

50g glace cherries

75g digestive biscuits

100g marshmallows

1/2 tsp vanilla extract

Rocky road fudge in a baking tray

Method

  • 1 Preheat your slow cooker on high heat. Line a baking tray with parchment paper. I used a 9×9 tray that is just right for this recipe.
  • 2 Break up all of your chocolate and add it to your slow cooker pan along with the condensed milk and vanilla extract. Leave the lid off and stir your mixture every ten minutes or so for 40 minutes and the chocolate is completely melted. Your chocolate should be a smooth and thick consistency.
  • 3 Add your digestive biscuits and stir gently. Now add half of your marshmallows stir again and then transfer your mixture to your baking tray. Level off as best as you can and top the fudge with your cherries and the rest of the marshmallows.
  • 4 Refrigerate for at least 4 hours.
  • 5 Cut into chunks and enjoy. You could also pop some in a mason jar and gift it to someone unless you don’t want to share!

How do I store Rocky Road Fudge?

Once your rocky road fudge has set, you can store it in the fridge for 1-2 weeks (if it lasts that long!)
If you want to keep it even longer, you can freeze it. Just cut the fudge into pieces, pop them into a freezer-safe bag or freezer-safe container, and they’ll keep for up to three months. This is perfect for planning ahead if you want to have some treats on hand for when the sweet cravings hit or when unexpected guests pop by.

A ridiculously easy and super tasty slow cooker fudge recipe. This rocky road fudge not only tastes good, it's perfect for gifting too!
