Easy chicken and peach salad 2 1

I love a good salad. Salads are the perfect way to add some variety and liven up your lunch routine. Summer salads are especially delicious and easy to make. Especially if you can incorporate the best seasonal ingredients. With the right combination of flavours and textures, you can create a mouthwatering salad that will leave you feeling satisfied and energized for the rest of the day.
I also like that absolutely anything goes. You can add as little or as much of your favourite ingredients there’s no real guide.
I’ve recently been trying fruit in my salads and I’m thinking why didn’t I try this before?!

Chicken and peach salad


This no-faff peach and chicken salad is so refreshing on a summer’s day. It’s my new favourite lunch and I hope you enjoy it as much as I do.

Ingredients

  • Iceberg lettuce or your choice of green leaves
  • Peaches
  • Extra tasty cooked chicken (or just cooked chicken)
  • Red onion
  • Cucumber
  • Feta
Peach salad

Method

  1. Start with your green base in your salad bowl. In my case, lettuce.
  2. Cut a peach into segments and add to the lettuce. (Grill your peach if you prefer a warm salad)
  3. Add the chopped onion, cucumber and cooked chicken pieces. (I used extra tasty chicken from Asda)
  4. Top with crumbled feta.

Can I add anything else?

Of course you can! That’s the beauty with salads pretty much anything goes. You could add peppers, spring onion instead of red onion, cheddar instead of feta, or you could have a different meat or even drop the meat altogether.
You can of course add more greens such as kale, spinach or broccoli. I add spinach to my salads from time to time.
Couscous and quinoa are another fab addition too. The options are endless.

Do I need a dressing?

No, I prefer my salad without dressing as I feel it detracts from the fresh taste. Feel free however to drizzle a little balsamic vinegar if you prefer a little more zing. I love infused olive oils for a quick simple dressing with a little lemon juice. Or just spritz a little store-bought dressing of your choice.

Can I prep the salad and store it in the fridge?

You can prep and store a salad in an airtight container in the fridge. However with that said, If you are planning on adding tomatoes and cucumber, I would probably add this at the last minute to prevent everything from turning soggy.
Keep lettuce dry. If you’re using lettuce in your salad, make sure to dry it thoroughly before packing it in your container. Wet lettuce will wilt quickly, so use a salad spinner or pat it dry with paper towels.
Also, if you are using dressings, add them just before you are ready to eat.

  • Cucumber (3-4 decent slices chopped up)
  • Feta

    Ohh! I love the look and sound of this. I am bored of just eating normal, basic salads and haven’t thought of adding fruit. What a great way to jazz it up a bit. x

    Ooh, delicious! I haven’t used peaches in salad for ages and I really do need to step it up a bit with more variety. Salads are quick and tasty for summer meals but they can get rather samey and unappealing without different ingredients from time to time.

  5. I had nearly this same salad yesterday (with a drizzle of balsamic dressing). I love adding fruits to my vegetable salads.

  6. I have been having fruit in my salads for years which came about from realising that the traditional ploughman’s always had an apple and cheese was often served with grapes. It is great fun trying different fruits.
