I love salads, especially during the summer months. They are so versatile and take so little time to prepare, which is always a bonus after a long day.
This delicious and simple watermelon and feta salad is Slimming World-friendly.
Syn free if using feta as a healthy extra ‘a’, otherwise, 6 syns per serving.

Ingredients

300g watermelon flesh, chopped up into small chunks.

1 red onion, chopped.

4 tomatoes, cut into quarters.

180g feta, crumbled.

1 cucumber, cubed

Salt and freshly ground black pepper (optional)

Parsley to garnish (optional)

Dressing

1 tsp dried oregano

Juice of 1 lemon

Method

  1. Pop the watermelon, tomatoes, cucumber, onion and feta in a salad bowl.
  2. Garnish with parsley (optional).
  3. Mix the lemon juice and oregano together. Drizzle over the salad and toss until evenly coated.
