Adding another Slimming World recipe to the collection today. You can find more delicious concoctions on our Slimming World Page. Today we have this portion of yumminess, the delightful Beef Ragu Pasta Bake. The perfect dinner for all of the family to enjoy.
Cook time – 1 hour
Add 6 Syns if not using mozzarella as a healthy extra.
Beef Ragu Pasta Bake
1 onion finely chopped
1 large carrot, peeled and finely chopped
2 celery sticks, finely chopped
250g chestnut mushrooms, finely chopped
3 garlic cloves, finely chopped
700g jar passata
500g lean beef mince (5% fat or less)
250ml beef stock
8 tbsp tomato puree
1 tsp dried mixed herbs
Salt and freshly ground black pepper
Fresh basil leaves, finely chopped
400g dried pasta shells
200g mozzarella, cubed
Low-calorie cooking spray
1 Preheat oven to 180°C/160° fan/Gas 4. Place a large frying pan coated with low-calorie cooking spray on a high heat. Add celery, onion, carrot, mushrooms, garlic and beef mince and gently stir-fry for several minutes.
2 Add tomato puree, passata, dried herbs and stock and bring to the boil. Season and turn the heat down to medium, cover and cook for 20-30 minutes, stirring occasionally.
3 Whilst that cooks get started on your pasta. Drain when done.
4 Remove Ragu from heat and stir in the basil. Transfer half the sauce into a medium baking dish, top with pasta and pour over the remaining sauce and scatter the mozzarella. Bake for 25-30 minutes. Serve and enjoy!
