We’ve had such a brilliant time in North Wales but now it’s back to business and back to prepping for our weekly meal plans.
I have to admit, it’s been nice not having to plan ahead for dinners, what with being able to eat out most days. But, with that said, the fridge freezer is stocked back up and we are back on track.
So without further ado, here is what this week’s meal plan looks like!

Monday

Hearty Vegetable Crumble. I LOVE this. If you are looking for something really warming and hearty, then you will love this too! It’s a very versatile dinner as you can add all kinds of vegetables to this, so perfect for using up food in the fridge.

Tuesday

We all love mac cheese in our house and this Macaroni Cheese Bake With Sweetcorn And Peas is perfect for getting some extra veggies into the kids.

Wednesday

Butternut Squash And Sweetcorn Soup. This is another favourite of mine. I will most probably make a batch and freeze some for another week.

Thursday

Chorizo & mozzarella gnocchi bake. I hadn’t even tried gnocchi before until recently, but we all really like it and it is perfect for a comforting bake on those colder days.

Friday

Sausage, egg and chips. A simple, no-faff dinner for Friday.

Saturday

It’s taco time! I love the Old El Paso Mexican Stand ‘N’ Stuff Extra Mild Super Tasty Soft Taco Kit. Just add mince and salad and you’re away!

Sunday

Roast chicken dinner with veggies and mash.

  1. This sounds like a delicious week! I know what you mean about looking forward to not having to cook and meal plan though; my husband and I are heading away this weekend and I can not wait to get a mini break from cooking and meal planning and prepping food. But then after a few days of eating out I’m all excited to start eating healthy and preparing my own food again.
