Time for another meal plan. Our meal plans have been a bit hit and miss the past couple of weeks with being at Devon and having lots on!
I’m happy to be back on plan and safe in the knowledge I haven’t got to stress over what to cook for dinner.
Here is what our meal plan looks like for this week –

 

MondayMeatball And Garlic Bread Traybake. Some tasty comfort food for the start of the week.

 

Tuesday – Quorn fajitas. I like to include some meat-free meals during the week.

 

Wednesday –  Slow cooker rolled beef brisket with roasted vegetables and potatoes. The weather looks a little bleak here this week, so I am including some nice hearty meals to warm us up.

 

Thursday – Vegetable stir fry in black bean sauce. The kids aren’t too keen on this so they will be having macaroni and cheese with peas and sweetcorn.

 

Friday – Toad in the hole with cheesy mash and thick onion gravy.

 

Saturday – KFC Fakeaway. I will be making my own KFC-inspired air fryer chicken for this meal. I also have some food cartons that I use to make it a little more fun for the kids. My eldest actually calls it MFC – ‘Mum’s Fried Chicken’ takeaway!

 

Sunday – Mustard stuffed chicken with roast potatoes. I love a traditional roast but sometimes it’s nice to try some new alternatives. I will be sharing the recipe for this one very soon.

We’re starting to add some more hearty meals to the meal plan now that the weather is starting to cool down – lamb casserole and cottage pie are both on the menu for us this week. Love toad in the hole although never thought to do it with cheesy mash. Might have to add that one to our meal plan for next week! #MMBC

  5. Fab meal plan. I love the sound of the beef brisket. It is just the type of meal we need with the weather which is forecast. Mum’s Fried Chicken’ takeaway sounds like fun. x

  9. Sounds great, we are having roast beef and then Joe Wickes courgette pasta as it’s quick and easy to make and lasts a couple of days
