After the amount of rubbish we have eaten over Christmas boy am I glad to be meal planning again. I’ve piled the pounds on! I don’t do new year’s resolutions but one of my goals for this year is to get fitter, cut down on the snacks and to stop blaming my extra tyres on having the kids! My youngest is 7 so that doesn’t wash anymore hehe!
With that said, here is what our first meal plan for 2022 looks like.

Monday –

Jacket potatoes with tuna and sweetcorn.

Tuesday –

Slimming World friendly keema curry pie. Always look forward to this one.

Wednesday –

Oven-baked meatballs. A nice low-fat hearty meal.

Thursday –

Slow cooker beef stew. Love the convenience of a slow cooker dinner as I can be getting on with other jobs.

Friday –

Five-spice beef fried rice. This is one of our favourite dinners. It tastes so good!

Saturday –

Slow cooker chicken tikka masala.

Sunday –

A roast beef dinner with veggies.

  2. I’ve deliberately stayed away from the scales since Christmas! Our Christmas chicken ended up being a lot bigger than I ordered so this week we’re having a vegetarian week – today will be a super speedy spinach lasagne :o)
