I have been wanting to start a meal plan for some time now and last week I finally did it. Last week’s meal plan went really well and I have already noticed less waste from the shopping. It has also saved me more time allowing me to be getting on with other jobs.
Here is what we have planned for the week ahead.
Monday – Jacket potatoes with homemade chilli. I will most probably do the boys cheesy beans or tuna sweetcorn on top of theirs because they are not too keen on chilli!
Tuesday – Slow cooker corned beef hash. We have a home-ed group today so this will be a nice warming meal to come home to!
Wednesday – BBQ chicken steaks with vegetable rice. A quick and easy dinner that everyone enjoys.
Thursday – Beef ragu pasta bake. This is originally a Slimming World recipe but it tastes amazing so we use this recipe quite often.
Friday – Falafels. Served in pitta bread with salad and potato wedges. I love to make falafels as they can be prepped in advance and kept in the fridge. Then when you are ready for dinner they can be cooked in under 10 minutes. Superb when you have a bit of a busy day ahead.
Saturday – We are out for the day so we will grab something on our travels.
Sunday – Sausage casserole with creamy mash potato.

Yay! I’m glad the meal planning is going well.
Enjoy the corned beef hash. We loved it and even had it for lunch on Saturday too.

Sounds yummy! We have a pumpkin chili on our menu as well as a big turkey dinner at my son’s request and we’re trying out a new sausage/ tortellini soup.
I love falafels too, they’re so quick and easy to make and really delicious. I’ve heard that you can cook them in a waffle maker or a sandwich toaster but I’ve never tried it.
