I can’t think of anything more filling and hearty than a good old stew for dinner. Just recently I have been using the slow cooker more often. I love the convenience of prepping dinner in the morning, popping it into the slow cooker and letting it fill the house with the most amazing smells whilst we get on with our day.
Our favourite at the minute has to be this super tasty Slow Cooker Beef Stew And Mustard Mash. It’s that good even the children enjoy it! And I hope you enjoy it too.

Ingredients
- 900g diced beef
- 1 onion
- 2 celery sticks or leeks
- 3 carrots
- 2 tbsp vegetable oil/rapeseed oil
- 1 bay leaves
- 2 tbsp tomato purée
- 1 tsp dried thyme
- 2 tbsp Worcestershire sauce
- 2 beef stock cubes
- 2 tsp cornflour (optional)
- Mustard mash to serve (optional)
Method
1 Fry the celery and onion in 1 tbsp of oil on a low heat until softened. Add carrots, thyme and bay leaves, fry for 2 minutes and then stir in purée and Worcestershire sauce. Add 600ml of boiling water, stir gently and pour all of the ingredients into the slow cooker. crumble the stock cube on top, stir and season with pepper.
2 With a clean frying pan fry the beef in the remainder of the oil in batches until brown. Then add each batch to the slow cooker. Cook on low for 8-10 hour or on high for 4 hours.
3 If you prefer your stew thick then add a small amount of water to the cornflour to make a paste. Then use 2 tbsp of the juice from the slow cooker to add to the paste. Tip back into the slow cooker and cook for an extra 30 minutes.
Serve with mustard mash! By simply adding 2 tsp of wholegrain mustard into your mashed potatoes and mix.

I haven’t got a slow cooker but found a beef stew recipe last week that cooks on a low heat in the oven. I served mine with jacket potatoes but mustard mashed sounds much tastier – have pinned :o)
