Time for another meal plan. I missed getting last week’s plan posted but we are still meal planning regardless. Happy Valentine’s Day by the way! We won’t be having our Valentine’s Day meal today as we celebrated over the weekend. We thought with us both working today, it made sense to celebrate while we were off. Do you have a Valentine’s Day meal planned for today?
So without further ado, here is what our meal plan looks like for this week.
Monday –
A roast dinner. We had a lovely Valentine’s Day meal yesterday as we are both working today.
Tuesday –
Chicken fajitas using low-calorie Mission Deli wraps. Dry fry chicken strips, onion, and peppers with some smoked paprika, American mustard and chilli powder.
Wednesday –
Cheesy broccoli bake with some homemade chicken kievs. Probably filled with low-fat cream cheese and some bacon lardons.
Thursday –
Keema curry pie. Simple dinner to prepare and then throw in the oven when you want it. Craig is usually late on Thursday so it makes my life easier.
Friday –
Jacket potatoes with homemade chilli. I will pop the potatoes in the oven for super crispy skins and use Quorn for the chilli. This is our meat-free meal for the week.
Saturday –
Cheeseburger and chips. Homemade patties on brown buns with reduced-fat cheese, grilled onion rings, lettuce, tomato and pickles with ketchup. Served with air-fried chips. All the flavour of fast food without as much fat!
Sunday –
Meatloaf with steamed veg and mustard mash.
I hope this has given you some inspiration for your evening meals. I would also love to know if you have any favourite meals?
Pin me for later!

I’m doing a slow cooker roast today and will eat on it several days. I’m retired you know and sometimes I don’t want to spend much time cooking for just me. You have loads of tasty ideas. Yum #MMBC
Jacket potatoes and chilli are always a winner here – thanks for giving me the inspiration for tonight’s meal :o)

We did the same and had our Valentine’s day meal over the weekend although we are having an afternoon tea today.
Fab meal plan. I love the sound of your chicken kiev’s, my mouth is watering just thinking about them and the cheeseburgers too. Yum, yum x
Oh that cheese broccoli bake sounds really lovely. I may do that today actually.
