Meal planning for families.

It’s been a funny few months and I must admit our meal planning went through the window since we have been shielding. We are back on track now though and it feels good to have a little organisation again! I’ve snacked far too much these past few weeks and it is evident by my overly tight jeans! So here is our meal plan for this week.

 

Monday – Tuna pasta bake. This Slimming World friendly version of the family favourite is really easy and takes less than half an hour to make. The boys love this so it saves having to make different dinners for everyone.

 

TuesdaySlimming World Southern-style chicken. This is a new favourite of mine. It is not covered in a thick batter like most fried chicken recipes but is so tasty and has just three ingredients.

 

WednesdayKeema pies using Quorn. Just going to swap the mincemeat with Quorn for a meat-free meal.

 

Thursday –  Stuffed jumbo mushrooms. Portabello mushrooms with butternut squash, leeks, spinach and tomatoes topped with cheese.

 

FridaySlow cooker Chicken Curry served with pilau rice and some steak cut oven chips.

 

Saturday – Homemade beef burgers and sweet potato wedges. I love homemade beef burgers with a little salad, cheese and burger sauce.

 

Sunday – Chicken roast dinner. I’ve got a roast chicken in a bag from Asda for Sunday, They are such good value.

  1. I’m glad you’re back on track with the meal planning. Ahh! I have been snacking more too. I am totally blaming the kids, they encourage me. lol
    It sounds like you have some tasty meals planned. Some of the Slimming World recipes are so good. I love the sound of the Southern-style chicken. x

  2. Those all sound so good! I do meal plan but have also gotten out of the habit this past few weeks… months?! I need to get back to it though as I know we have lots of food in our pantry and freezer that we could be using up.

  3. Sounds like some nice choices. We like tuna pasta bake too. I love those chicken in a bag. We get the crown as none of us like the brown meat.
