I am all for the convenience of quick dinners in the week, but I am also a big fan of homemade hearty meals. Especially come the colder months when you want some comforting goodness in your tummy, and I think lasagne ticks that box perfectly!
My kids always leave empty plates when we have homemade lasagne, so not only is it a frugal meal to make, it is family-friendly too. I hope you enjoy it as much as we do!

Can this lasagne be frozen for later?
Yes! Once the lasagne has cooled down, pop it into a freezer-safe container and freeze it for up to 1 month. I love making batches and freezing them as they make really convenient midweek meals when you just don’t have the time to be stuck at the cooker.
Perfect to take to work too if you have a microwave on site.
What to serve with Lasagne?
You really won’t need anything alongside this hearty dinner but if you wish to serve something on the side, then here are just a few tasty ideas –
- Airfryer chips
- Tomato Feta Salad
- Garlic bread
- Steamed broccoli
Ingredients
500 grams of mince beef
3 x 400g chopped tomatoes
2 x brown onions, chopped finely
3 tbsp tomato puree
3 cloves of chopped garlic
250 grams of grated mature cheddar
50 grams of plain flour
50 grams of butter
500ml whole milk
Olive oil
1 tsp Oregano
1 tbsp basil
2 x beef stock cubes
White pepper
Lasagne sheets
Method
Preheat your oven to 180 degrees.
Fry the onions in a frying pan with a little olive oil until translucent. Place the chopped tomatoes in a large saucepan and place over a low heat. When the onions are cooked, transfer them to the tomatoes.
Return the frying pan to the hob and add the beef mince. When browned add the garlic, a pinch of pepper and the stock cubes and fry for a further 2 minutes.
Add the beef mince to the tomatoes along with the herbs and tomato puree and heat until bubbling.
Add the butter to a clean saucepan and melt over a low heat. When melted, add the flour and whisk together. Slowly add the milk, whisking all of the time. When thickened add 200g of the grated cheddar and stir until melted.
Using a large oven-proof dish, Add first a layer of red sauce, then add a layer of pasta sheets, top with a layer of cheese sauce. There should be enough to do three layers of pasta. Top with remaining cheese sauce and 50g of cheddar along with a pinch of oregano.
Bake in the oven for 30 minutes or until the pasta is soft (insert a butter knife in the centre)
Cut into six and serve with salad, steamed green vegetables or even chips.
Place the leftovers in an airtight container and freeze for up to two months. Great for taking to work on a cold day or a quick lunch.

It sounds delicious. Lasagne is one of my families favourite!
Yum looks amazing!
I am not the lasagne maker here, Becky is. hehehe I will have to show her this recipe. It sounds so good. x
I love a good lasagne and what I realise over time is that you can’t rush it and you must simmer those tomatoes down. I add a good bit of red wine in my sauce too to add some richness and sweetness to it.
Thanks for the great recipe. I am fond of it and am always looking for a good recipe. Happy Monday! #MMBC
That looks delicious! Whenever I make lasagna, or nearly any casserole really, I try to double the recipe and make one for dinner that night and one to freeze for later. Most casseroles freeze so beautifully and I love having ready made meals on hand.
Your recipe for lasagne sounds wonderful, I will give this one a go.
This looks and sounds delicious! I make spinach lasagne a lot. It’s basically frozen spinach, lasagne and tomato sauce layered with mozzarella on top – a great vegetarian alternative :o)

I followed a lasagne recipe once, I felt I was still cooking 3 days later, this looks much more doable to my cooking level to that one. Definitely going to bookmark this.
