Hands up who used to have rice crispy cakes at school! Those and cornflake cakes, always remind me of my childhood. They are such a nostalgic snack and now my kids love them too.

Just the other day I was looking to make some easy sweet treats with the kids. We all love Biscoff and I thought a nice and easy dessert would be Biscoff with Rice crispies
So Biscoff Rice Krispies cakes it was, (squares, treats or snacks) whatever you prefer to call them, trust me, these taste amazing! And if you like the amazing flavour of Lotus Biscoff you will probably want to go and check out my Slow Cooker Biscoff Fudge! It’s naughty but very nice.

If you are a Biscoff fan like me, then you will love these little squares of delight! I can guarantee they won’t last long if you have kids! My two go absolutely crazy for them.

The good thing about these Biscoff rice crispy cakes is that they are a no-bake dessert. No faffing around, just 5 ingredients and 30 minutes of your time to make them. Great to get the kids involved in the kitchen. Enjoy!

Ingredients

200g Puffed rice

175g Biscoff spread

60g Unsalted butter

300g mini marshmallows

200g white chocolate to top your squares. (Or whatever else you fancy.)

Method

  1. Line a 9-inch baking tray with non-stick paper.
  2. Put the butter in a large non-stick saucepan and place over low heat to melt.
  3. Add the marshmallows and stir constantly until melted and smooth consistency.
  4. Remove the pan from the heat and add the Biscoff spread stirring until it is a uniform colour.
  5. Add the rice Krispies to the Biscoff mallow mixture and combine. Turn the mixture into the baking tray and compress (Put a sheet of non-stick paper on top to save it from sticking to your hands)
  6. Melt the chocolate, I prefer to place the chocolate in a bowl over hot water, but you could microwave it. Then pour your melted chocolate over the rice Krispie mixture. You could add a sprinkle of crushed Biscoff biscuits on the top, or drizzle over a little melted milk chocolate if you want to be fancy.
  7. Allow it to cool for approximately 30 minutes and then slice into sixteen squares. They keep fresh for a couple of days in an airtight container, but I doubt they’ll last that long!

These chewy and sweet Biscoff rice crispy cakes taste Delightful and will leave you wanting more! Even mix up the ingredients to make your own take on them!

  2. These sound delicious! I ordered biscoff spread from Amazon a year or so ago after seeing a few recipes from some UK bloggers that sounded so good and I just love the stuff! It’s only starting to show up on American shelves and I am so happy to see anything Biscoff related. YUM!

    Oh, fab! I love easy recipes like this, especially if I’ve already got the ingredients in my store cupboard. I enjoyed the crisp or cornflake fridge tray biscuits that mum used to make and these look even better.
