After months and months of threatening to start meal planning, I’m finally getting into the swing of it! Last week’s meal plan went down really well. We have a really busy week this week what with speech and language therapy for my youngest and several other appointments we have to attend, so having a meal plan in place has helped no end!
Here’s what our meal plan looks like this week.
Monday – Slow cooker pulled pork baps. Mondays are always chaotic in our house so I need something that is easy to prep and cooks by itself. Pulled pork baps tick all of the boxes and are super filling.
Tuesday – Veggie burgers and sweet potato fries. I make my own sweet potato fries in the oven with a little seasoning, then serve them with veggie quarter pounders and salad.
Wednesday – Minted lamb chops with mash and veg. Its forecast to be a cooler week ahead so it’s nice to have something warming and hearty. I always make a big boat full of mint gravy to pour over the mash.
Thursday – Chip shop. We have a few appointments on Thursday that are later in the afternoon. Instead of eating later on I will just pick fish and chips up on the way home.
Friday –Flaky Pastry Pesto Chicken. More appointments today so this quick dish is perfect.
Saturday – Tuna pasta bake.
Sunday – Toad in the hole. We have a lovely farm shop close to us with a butcher inside that makes all of his own sausages. I’m going to pick some up this week and make a huge tray of toad in the hole, served with mustard mash and onion gravy.

Yum! All your meals sound so good! We never have lamb because my family are idiots and they don’t like the thought of eating baby sheep. lol All other animals are fine to eat, they’re mad. lol I never see the point of just buying lamb for me but I might and it might tempt them. hehehe

I’m slowly starting to pull our menu together for the week since we’re going grocery shopping tonight. I rely a lot on casseroles and soups for dinner in the winter.
