It’s nice to be back on the meal planning after having a week or so off. We’ve had so much going on in terms of work and family commitments that we’ve kind of winged the dinners.
We’re back on track now and looking forward to lots of hearty dinners now that autumn is here.
This is what our meal plan looks like this week.
Saturday – No faff taco boats using an Old El Paso kit.
Sunday – Sausage casserole with leek mash.
Monday – Slow cooker beef stew with cheesy dumplings. Really looking forward to this one.
Tuesday –Sweetcorn & courgette fritters topped with poached eggs.
Wednesday – Cottage pie. Another hearty dinner for the colder nights.
Thursday – Spaghetti bolognese. Always a winner.
Friday – Slow cooker chicken curry with mini cheesy naan breads. My favourite homemade curry recipe by far! It’s mild enough for all the family and the kids love it.

Ahh! Those Old El Paso kits are fab. We’re having sausage casserole too next week but a ready made one from Iceland.

I’m checking out everybody’s meal plans for inspiration this week – I’m in a real cooking slump and in need of new ideas! I love the sound of leek mash. Shepherds Pie is always a winner here too!
