I love a warming soup when the autumnal months are upon us and this tasty pumpkin soup is ideal for the colder months ahead. Why not make a few batches and you will have less prepping to do later on in the week?

Ingredients
- 750g Pumpkin seeded & cubed
- X2 Onions
- X2 Chopped carrots
- 2-3 Cubes of vegetable stock
- 2 1/2 Tablespoons of vegetable oil
- 1L Water
- 250ml Double cream
- 1 Tablespoon black pepper
- 1 1/4 Tablespoon ground nutmeg (optional for taste)
Method
- Preheat oven to 220ºC / Gas mark 7.
- Put Pumpkin, onions and carrots on a baking tray drizzled lightly with vegetable oil and cook in oven until soft.
- Place saucepan with water over medium heat, add vegetable stock and bring to boil. Add potato and simmer for around 20 mins until soft.
- Add potato and water along with vegetables to a food blender and mix until smooth.
- Return to pan on low heat, stir in cream, nutmeg (optional) and pepper. Serve with some fresh crusty bread and enjoy.

I need to try this! I have made butternut squash soup but not pumpkin. I love an asparagus and spinach soup. It’s made adding lemon juice and sping onions and tastes so lovely and is so good for you!
