I love trying out new recipes and especially those that you can whip up quickly for a mid-week meal. This easy recipe from Jamie Oliver is quick to make and tastes amazing. It is also cost-effective and not too heavy on the hips at just 618 calories per serving.
Ingredients
- 320g sheet of all-butter puff pastry
- 4 tsp green pesto
- 4 x 120g skinless chicken breasts
- 400g cherry tomatoes on the vine
- 400g green beans

Method
1 Preheat oven to 220ºC/425ºF/gas 7.
2 Unroll pastry and cut lengthways once and then cut each half into 8 strips.
3 Flatten the chicken with a rolling pin so that it is the same thickness end to end.
4 Place the chicken in a baking tray, season and cover with pesto.
5 Cover each fillet with 4 pieces of pastry, overlap and tuck the pastry under at the ends before brushing with a little olive oil.
6 Place the tomatoes in a baking tray with the vine and drizzle with olive oil and season.
7 Place the chicken parcels on the top shelf of the oven with the tomatoes on the shelf below and roast for 20 minutes.
8 Trim the green beans and cook for between 5 and 10 minutes until tender.
9 Drain the beans, plate up along with the flaky pastry chicken and top with tomatoes.
