Slimming World Beef In Onion Gravy With Veg Crush
750g very lean braising steak. All fat removed cut into 2 1/2 cm cubes.
500g peeled carrots chopped
500g peeled swede chopped
2 x sliced red onions
1 x white onion chopped
2 garlic cloves chopped
1 heaped tbsp tomato puree
1 beef stock cube
1 tbsp balsamic vinegar
Salt and freshly ground black pepper
Low-calorie cooking spray
Freshly chopped thyme leaves
1 Preheat oven to 160℃/Fan 140℃/Gas 3
2 Spray low-calorie cooking spray on an ovenproof casserole pan and fry the red onions until slightly caramelised adding a little water if needed. When done remove and respray the pan then brown the meat in portions.
3 Whilst the meat is browning add the white onion garlic to the food processor and mix until finely chopped.
4 Stir the cooked red onions in with the meat along with the pureed onion and garlic, tomato puree, stock cube, balsamic vinegar and 500ml of water. Season and bring to boil.
5 Cover and cook in the oven for 2 hours until the meat is tender.
6 Roughly 3o minutes before the meat is ready boil the carrots and swede for 25-30 minutes or until soft. Drain and mash.
7 Dish up the seasoned meat and vegetable mash and top with thyme.
