This is my all-time favourite meal on Slimming World. It’s tasty, very filling and perfect for all of the family. Cheesy broccoli bake is freezer friendly and also suitable for vegetarians. Such a quick and easy recipe to prepare which makes it ideal for a midweek meal when you don’t have much time on your hands. Slimming World Cheesy Broccoli Bake 4 Syns Per Serving
500g broccoli Florets
200g cherry tomatoes quartered
8 spring onions finely chopped
200g fat-free cottage cheese with onion and chives
2 large eggs beaten
3 garlic cloves crushed
Salt and freshly ground pepper
110g reduced fat cheddar cheese grated
4 tbsp finely chopped parsley
1 Preheat oven to 220°C/200°C fan/gas mark 7
2 Cook broccoli in a large saucepan in boiling water for 2-3 minutes. Drain off the water, transfer to a bowl and put to one side.
3 Add spring onions and cherry tomatoes to the broccoli, mix well and transfer to an ovenproof dish.
4 Whisk the eggs in a separate bowl along with the cottage cheese and garlic. Keep mixing until the mixture becomes smooth. Season and then add parsley.
5 Pour the egg mixture over the vegetables and gently stir to make sure the ingredients is evenly covered. Sprinkle the cheddar cheese on top and cook in the oven for 15-20 mins.
6 Remove from oven and serve.
